Lime Out, the Floating Taco Bar Sets Sights on Second Location

The founders of Lime Out have announced plans to open a second location on St. Thomas this November, bringing their unique “eat-in-the-water” experience to Lindbergh Bay just in time for peak tourist season.

Beginning as a dream among childhood friends on St. John, Lime Out quickly evolved into an international phenomenon after its launch, earning a spot on TIME Magazine’s prestigious list of the World’s Greatest Places. Now, the team, Dane Tarr, Richard Baranowski, Dylan Buchalter, Chelsea Baranowski, Cameron Raimondi, Angelo Raimondi, and Val Tarr, is ready to replicate that success and share their one-of-a-kind dining concept with a wider audience. “Expansion was the next logical step. We now have the right team and systems in place to confidently expand. We truly can’t wait for this next opening and are grateful for the opportunity to continue doing what we love”, shared the founders.

While the core experience of enjoying gourmet tacos and craft cocktails while floating in the blue waters of the Caribbean remains the same, the St. Thomas location will be notably larger, spanning 850 square feet. Guests can expect the same vibrant atmosphere, along with the signature menu items that made the original famous, plus a few specials exclusive to the St. Thomas spot.

The choice of Lindbergh Bay was selected through a strategic view of central location, calm waters, and accessibility; additionally the Lime Out team used the guidance of the hard-won lessons from their St. John venture to support their vision of the new location. “Sustainability is a core pillar, with a land-based kitchen for food prep to protect water quality, biodegradable serving materials, and solar power. We also plan to continue facilitating community beach clean-ups and showcasing local artists and businesses”, explained the founders.

The journey from childhood friends to successful co-founders has been, in their words, “the journey of a lifetime”. “We’re friends first, and that’s the most important thing to us. We have different views, but we all have the same moral compass and are always able to have creative and honest discussions,” the founders said.

Their philosophy is simple: make every day the “Best Day Ever”. This ethos is at the heart of the Lime Out experience. “We aim to provide more than a meal, but a chance for guests to disconnect from routine and reconnect with each other in a stunning natural setting,” explained the founders.

With their immediate focus on a successful St. Thomas launch, the team remains open to future growth. But for now, their focus is on keeping the business organized and efficient as well as energetic and fun.
